The SD-MT2-W is a Japanese one-kin bread machine with thirty-eight numbered automatic menus. Its notable addition is amazake made from cooked rice and rice koji, while its bread selection retains pain de mie, sandwich bread, Half Loaf, sixty-minute bread and separate wheat-free bread and cake routines. The count differs from nearby MT models because the actual menu changes; it should not be used as a simple ranking of capability.
Panasonic confirms the exact white -W variant on its maker support page and provides operating and recipe books. The electrical specification is 100V at 50/60Hz with 430W rated consumption. The manual explicitly limits the design to Japan and excludes use where voltage or frequency differs. It remains a regional owner reference outside routine US buying matches, with no claimed hands-on bake or present stock assertion.
Amazake is a defined cooking process
Menu 35 uses warmed cooked rice, water and rice koji. The documented recipe combines 200g cooked rice, 300g water and 100g dried koji, with a stated alternative amount for fresh koji. The owner sets a six-to-ten-hour duration in ten-minute increments, and the manual explains that longer cooking makes it sweeter. This is a specific recipe adjustment rather than a general temperature-controlled vessel for any fermentation.
The process also requires attention after about twenty minutes to scrape rice grains from the sides and restart. The lid must then remain closed to maintain the required conditions. Someone attracted to a long-duration program should account for that initial return to the kitchen. The adjustable amazake time is not evidence that the owner can choose the temperature or duration of a bread-proofing stage.
Choose the bread course by its own recipe
Pain de mie takes approximately four hours fifty minutes, standard white bread four hours, soft bread four hours twenty minutes and sandwich bread three hours. French, rye and whole-wheat breads take around five hours. Cooked-rice bread and cooked-rice French bread use cooled cooked rice with wheat flour; they do not mill raw rice. Their timing and formulation differ from the rice-flour programs.
Half Loaf is a separate three-hour-thirty-five-minute course with its own formula and reservation support. It does not provide a half-size version of every bread. The Japanese one-kin format and Half Loaf label should remain in their documented form, without a guessed conversion to exact pound settings. A smaller ordinary loaf also does not establish a smaller GF loaf or automatic inclusion support on the half program.
The GF bread course and GF cake are independent
Menu 18 makes rice-flour bread containing wheat. Menu 19 is rice-flour bread without wheat, running approximately one hour fifty-five minutes. Its recipe explicitly includes 300g gluten-free rice-bread mix, so the model has a dedicated GF-specific bread course. It has no documented finished-pound selector. The amount of flour used is an ingredient input, not a declared loaf weight.
The wheat-free instructions also provide a named rice-flour and prepared-paste alternative, with restrictions on substitutions such as oils and dairy ingredients. Reservation is supported, although Panasonic warns that rice-bread results can deteriorate when reservation is used above 25°C. Ingredient sourcing and room conditions are therefore part of the practical workflow.
Gluten-Free Cake is separately listed as menu 28, taking about one hour forty minutes. It requires scraping after approximately seven minutes. That program provides a different food and handling pattern from the yeast-leavened wheat-free bread. It should not be used to infer a second GF bread size or a way to place any wheat-free mixture into either course indiscriminately.
Several short programs still require work
Rapid bread takes approximately one hour fifty-five minutes, Quick Sweet bread two hours twenty minutes, and sixty-minute bread an hour. They have distinct formulas. The fifty-four-minute quick bread uses baking powder and needs early scraping and shaping; soy scones take about fifty-eight minutes with their own attended steps. These durations describe specific recipes, not a universal shortcut for an ordinary loaf.
The eight-minute speed-dough menu kneads without providing a finished loaf or full rising cycle. Ordinary bread dough takes about an hour and pizza dough forty-five minutes, with neither offering delayed completion. Mochi and noodle/pasta dough use a separate noodle/mochi paddle and leave their own later handling tasks with the owner. Brioche, marble bread and Arrange Bread also require the owner to return during the cycle.
Inclusions and reservations have menu boundaries
The raisin/nut container holds up to 100g combined, separate from the yeast container. Suitable dry additions can be released automatically. Wet, sticky or melting ingredients need hand addition at the signal. Coarse mixing on eligible menus can help preserve pieces, but its ingredient and water guidance still applies. It is a mixing option, not a full bread-stage editor.
The table permits suitable additions for ordinary bread dough and the wheat-free rice-flour course. Pizza dough, speed dough and Half Loaf do not gain the option simply because the dispenser is present. Supported dry-yeast breads can be reserved to finish within thirteen hours, while Hoshino bread has a ten-hour limit. Three crust shades also apply only where the menu table marks them.
Natural yeast, condition and the ownership decision
The Hoshino system uses twenty-four-hour starter preparation followed by a seven-hour loaf or four-hour dough program. The FAQ discourages homemade natural yeast because fermentation strength can be unstable and recommends Hoshino. That restriction remains in force despite the separate amazake program. No independently adjustable bread-proofing duration, user fermentation temperature or complete stored custom sequence was established.
The approximately 24.1cm-wide, 30.4cm-deep and 34.7cm-high body weighs about 5.6kg. Check lid clearance, coating condition, shaft movement, both release doors and the presence of the alternative paddle. Panasonic specifies gentle hand cleaning and excludes the dishwasher for the pan and paddles. A complete MT2-W is most useful to an owner who wants its actual bread and koji-rice cooking recipes. It is less suited to a purchase driven primarily by arbitrary starter fermentation or a presumed universal small-loaf selector.
